Dokudami tea, three ways of drinking, hot and iced!

1. Iced Dokudami tea just like Barley tea
Basically, Dokudami tea can be made like Barley tea (Japanese often drink iced Barley tea in summer) , just put leaves into a kettle and boiled on low heat for around 7 to 10 minutes after boiling. I use a smaller kettle of 650ml and put two handful of leaves and decoct to be a little stronger tea. Then add some water to adjust to the preferred concentration and chill in the refrigerator.
2. Drink the boiled tea as it is
You can also drink it after boiled in a kettle as it is. When I make Dokudami tea iced, I decoct it stronger. However when drink as it is, use less tea leaves, a handful of leaves would be enough. The boiling time on low heat is no change 7 to 10 minutes. The warming tea color is like Hoji cha (roasted green tea).
3. Drink Dokudami tea with a tea pot like English tea
Put a half handful of tea leaves in a tea pot, pour the hot boiling water and wait 3 to 5 minutes. Then hot Dokudami tea is ready to serve. The tea color is lighter than decoction, looks a little elegant. Even serving with a piece of cake would work well!
Dokudami is so familiar plant, it grows everywhere around in Kanagawa. In fact it is a Japanese herb, a medicinal plant. During the hot summer, I want to keep the iced handmade Dokudami tea all the time in the refrigerator!
